Ethan Campbell is the Culinary Director for Our Daily Brett, Good Honest Food, Salon Catering, Super Variety, Business & Pleasure, and Neighbour Coffee. He has been with the company for nearly eight years, originally drawn to Our Daily Brett by its simple but powerful mission: Good Honest Food. That philosophy continues to guide his approach to menu development, leadership, and ingredient sourcing across all concepts.

With nearly two decades of professional culinary experience, Ethan leads with a deep respect for seasonality, local producers, and community-driven food culture. Born and raised in Calgary, he has worked in both fine dining and casual kitchens, developing a style that’s approachable, thoughtful, and memorable.

From shaping menus to mentoring teams, his work focuses on food that connects people—whether it’s a beautifully plated crudo at Business & Pleasure or flipping burgers on the patio at Our Daily Brett for a community fundraiser. While he draws inspiration from Alberta’s growers and producers, much of his creativity comes from within his team—learning from their diverse backgrounds, cooking styles, and personal food stories.

What made you want to be a chef?

I grew up watching my grandma host beautiful, over-the-top dinner parties. It made me fall in love with food as a way of bringing people together. That energy stuck with me—and once I got into a kitchen, I never looked back.

Why do you use Alberta ingredients in your kitchen?

We have access to world-class producers right here in Alberta. Whether it’s Hutterite poultry, Pioneer charcuterie, or Mann’s Organics, supporting our local food system just makes sense—ethically, economically, and culinarily.

What is your favourite Alberta ingredient to use?

Haskap berries. I grow them in my backyard, and they’ve become a staple in our home kitchen. I love tossing them into fun breakfast dishes for my kids—on top of pancakes, mixed into yogurt, or folded into muffins. They’re tart, vibrant, and full of personality.

What dish (that features Alberta ingredients) should guests be sure to try on your menu?

The Peach + Almond French Toast is a must-try. It starts with locally made brioche soaked in a rich vanilla custard, made with organic eggs from Mann’s Organics and finished with a dollop of tangy Skyr from Vital Greens Dairy. We top it with juicy peaches, toasted almond crumble, and a thyme-infused maple syrup that brings a sweet and savoury balance to the dish. It’s a beautiful reflection of the ingredients we’re proud to work with and a perfect example of what Good Honest Food means to us.

What is your favourite kitchen/cooking memory?

Celebrating the 10-year anniversary of Our Daily Brett stands out as one of the most meaningful moments in my career. Getting to cook for our loyal guests, friends, family, and the incredible suppliers we’ve partnered with over the years was an unforgettable experience. It was a full-circle moment that reminded me why we do what we do—building community through food, one plate at a time.

What do you like most about Alberta food and drink?

It’s grounded in resilience and driven by community. From brewers to beekeepers, we’re surrounded by passionate people who take pride in what they grow, raise, and craft.
