Hawthorn Dining Room and Bar offers a new era of dining at the Palliser. Hawthorn re-defines the Calgary culinary experience with sociables and family-style dining from Alberta’s most trusted producers, farmers and suppliers.
“Alberta On The Plate ties in really well with what Hawthorn is all about, the philosophy of the restaurant is to promote artisans, producers and farmers from Alberta. We are very Alberta focused, we try to keep everything within Canadian borders,” says Chef Eraj Jayawickreme.
Alberta On The Plate have curated strong partner relationships – they even have their own Eau Claire Distillery Gin called The Hawthorn. They use Benchmark beef for all the beef in their restaurant, Galimax for their vegetables and have a farm that grows stuff specifically for the restaurant.
“I work with Louise Skin Care to have a farm to washroom restaurant – we do a Spring, Summer and Winter line. We grow botanicals and create soaps and lotions curated for the restaurant itself,” says Jayawickreme.
Being a part of Alberta On The Plate is important to The Hawthorn and they are incredibly committed to the “farm to table” philosophy.
“We look forward to people trying our menu. We want people to experience Hawthorn, we are a new restaurant and we want to showcase the food and the space.”
